Preparing Frozen Croissants for Baking:
Remove the desired number of croissants from the freezer.
Place them round side up and 3 inches apart on a baking sheet lined with parchment paper.
Optional: Loosely cover with lightly greased plastic wrap to prevent sticking. Must be loose enough to allow the croissants to rise.
Method 1: Approximately 8-10 hours before baking*
Allow croissants to proof (rise) at room temperature (68°F–72°F) for approximately 8-10 hours. Each croissant should measure 2 ¼-2 ½" high.
Method 2: Approximately 11-12 hours before baking*
Place croissants in refrigerator to defrost for 8 hours then allow them to proof (rise) at room temperature (68°F–72°F) for approximately 3-4 hours. Each croissant should measure 2 ¼-2 ½" high.
IMPORTANT TIPS:
Proofing time is affected by temperature (more time is needed if room is colder and less time is needed if room is warmer)
If croissants start to reduce in size, bake them immediately.
Preheat the Oven:
Set oven to 350°F (177°C) and ensure it is fully preheated before baking.
Prepare for Baking:
For even flakiness, ensure they are fully thawed & proofed before baking.
For a golden finish, brush the croissants with an egg wash (1 beaten egg mixed with 1 tbsp of water).
Bake:
Place baking sheet with croissants on the middle rack in preheated oven.
Bake for approximately 20-25 minutes, or until puffed and dark golden brown. (NOTE: Light golden brown will not have the desired crispy layers)
Avoid opening the oven door during baking, this will affect the flakiness of the croissants.
Cool and Enjoy:
Remove from oven and let cool on wire rack for a few minutes.
Enjoy warm for the best flavor and texture.
Best consumed the same day!
Storing Baked Croissants:
If not consumed the same day, place baked croissants in an airtight container or freeze.
If frozen, let thaw for 10 minutes before reheating.
To Reheat & Refresh:
Place in preheated oven at 300°F (150°C) for a few minutes
Or, place in microwave to 5-10 seconds.
