Storing Your Croissants:
Freezer storage is required
- Immediately place the unbaked croissants in the freezer.
- Store at 0°F (-18°C) or below.
- Use within 1-2 months for best quality.
- Follow the "First In, First Out" (FIFO) method to use older croissants first.
Baking Your Croissants:
Approximately 8 hours before baking*
- Remove the desired number of croissants from the freezer.
- Place them round side up and 3 inches apart on a baking sheet lined with parchment paper.
- Allow them to proof (rise) at room temperature (68°F–72°F) for approximately 8-9 hours. Each croissant should measure 2 ¼-2 ½" high.
- Proofing time is affected by temperature (more time is needed if room is colder and less time is needed if room is warmer)
- *If croissants were slightly dethawed and proofed during shipping, less proofing time will be needed.
NOTE: If croissants start to reduce in size, bake them immediately.
Ensure croissants are fully thawed and proofed before baking for an even flakiness.
Preheat the Oven:
- Set your oven to 350°F (177°C).
- Ensure it is fully preheated before baking.
Prepare for Baking:
- For a golden finish, brush the croissants with an egg wash (1 beaten egg mixed with 1 tbsp of water).
Bake:
- Place baking sheet with croissants on the middle rack in preheated oven.
- Bake for approximately 20-25 minutes, or until puffed and dark golden brown. (NOTE: Light golden brown will not have the desired crispy layers)
- Avoid opening the oven door during baking, this will affect the flakiness of the croissants.
Cool and Enjoy:
- Remove the croissants from the oven.
- Let them cool on a wire rack for a few minutes.
- Enjoy warm for the best flavor and texture.
- Best consumed the same day!
Storing Baked Croissants:
- If not consumed the same day, place baked croissants in an airtight container or freeze.
- If frozen, let thaw for 10 minutes before reheating.
- To Reheat & Refresh:
- Place in preheated oven at 300°F (150°C) for a few minutes
- Or, place in microwave to 5-10 seconds.
